Houtou, a typical local dish of Yamanashi Japan

Houtou is one of the most popular local dishes in Yamanashi. It is a simple dish of flat wheat noodles kneaded with pumpkin, potatoes, mushrooms, seasonal vegetables, meat, and other ingredients, simmered in a miso-based broth. It is said that the warlord Takeda Shingen used to eat this dish during his campaign.

At home, it is often prepared in a large pot, but at restaurants, it is usually served in an iron pot for each person. Since the noodles are cooked with the batter still attached, the soup thickens and blends well with the noodles.
